A Brief History and Evolution of These Machines

We first introduced the Lelit Bianca in June 2018 when we were the master importers. Our management team worked closely with Lelit, listened to our input, and we introduced their dual boiler to the world, along with a new feature, flow control.

After a long hiatus, we resumed our relationship with Rocket by bringing them back in February 2023. One of those models was the Rocket R58 Cinquantotto.

In 2020, Andrea Ferrari founded his own company, Torre Espresso. Having worked for decades in the espresso industry at Bezzera, he has developed many close work relationships, especially with our management team. Because of this, he decided to work directly with us, and in August 2023, we introduced the Torre Peppina.

How are they similar (and different)?

Each espresso machine shares dual-boiler architecture, an E61 grouphead, and a rotary vane pump. Yet each model diverges in materials, control interfaces, and ergonomics. Below is a feature-by-feature breakdown.

Dual Boiler Systems: The Core of Performance

Below is a side-by-side specification table that highlights boiler construction, capacity, insulation, and temperature stability.

Machine Boiler Material Brew Boiler Capacity Steam Boiler Capacity Thermal Stability
Torre Peppina EVO V2 Stainless steel 0.75 L 1.5 L Insulated
Lelit Bianca V3 Stainless steel 0.8 L 1.5 L Insulated
Rocket R58 Cinquantotto Copper body, Brass end plates & T.E.A.+ coating 0.58 L 1.8 L Insulated

As you can see, the boiler sizes are close in size. Not one boiler is drastically bigger than another. The bigger the coffee boiler, the better the thermal stability and temperature recovery speed. The bigger the steam boiler, the higher the capacity you have for steaming. Stainless steel boilers are less susceptible to limescale buildup, while copper boilers excel at heat retention.

  • Lelit angled the Bianca’s coffee boiler to help reduce air pockets.
  • Torre upgraded the boiler flanges on the V2 Peppina to be thicker for better durability over its lifetime. The Peppina also reduces air pockets through an upper fitting on top of the coffee boiler.
  • Rocket added a T.E.A.+ coating on the inside of the R58’s boilers to help reduce the possibility of limescale sticking to the walls.

The E61 Group Head: A Timeless Design

The E61 grouphead, introduced in 1961, is a crucial component in espresso machines, known for its thermosiphon system that maintains even temperature and its pre-infusion mechanism for improved extraction uniformity. The design of the E61 grouphead is almost perfect, so there isn’t much more to expand upon. However,

  • Torre has developed the ERGOLift lever instead of the traditional E61 lever that the Bianca and R58 use. Although it uses more arm movement, the motion eventually brings you directly to the flow control knob (which is our next topic).

Flow Control: Precision at Your Fingertips

All three machines are flow control-capable. This enables baristas to fine-tune extraction flow. However, each one has a slight difference.

  • Torre Peppina’s flow control knob winds beyond 360° to further increase flow.
  • Lelit Bianca’s flow control paddle ranges from standard flow to fully closed.
  • Rocket R58, by default, does not come with flow control, but we do offer a kit sold separately.

PID Temperature Control: The Heart of Consistency

A PID controller uses an algorithm to precisely regulate the temperature of an espresso machine’s boiler(s), ensuring quick, consistent brew temperatures and repeatable results. This is especially critical when brewing light or medium roasts, which require precise temperature profiles to extract properly. Each espresso machine has different built-in controls that allow you to change parameters.

  • The Peppina has a touch screen built into the front panel. Easy to use and understand. Plus many other options & settings.
  • The Bianca has a standard display with -/+ buttons to navigate/change options. It will take a little time to understand how to navigate and change settings with just 2 buttons. However, once you learn, it will become second nature.
  • The R58 also has a touch screen on the side of the machine attached by a wire. It can be pulled out for an easy handheld experience.

Pump Systems: Noise and Plumbing Flexibility

Rotary pumps are known for their quieter operation compared to vibratory pumps, leading to more uniform extraction. They deliver smoother pressure, are longer lasting, and in most cases are necessary when hooking up to a direct water line connection.

  • All 3 models use similar rotary vane pumps that hook up to a motor.

Design and Ergonomics: Enhancing the User Experience

Thoughtful ergonomic design translates into more enjoyable daily use.

  • Torre Peppina EVO’s ERGOLift lever guides your hand directly to the flow control knob..
  • Lelit Bianca’s removable water tank assembly can be relocated to either side of the machine for easier refilling.
  • Rocket R58’s hinged top and side panels enable rapid maintenance and access.

User Interfaces: Digital Precision vs. Analog Tactility

Interface preferences hinge on whether you favor digital precision or classic controls.

  • Torre Peppina EVO features a color touchscreen with menus for on/off, eco mode, steam boiler on/off, programming, pre-infusion, and diagnostics.
  • Lelit Bianca V3 uses the LCC with 2 buttons to navigate through the menus for temperature control, pre-infusion, and eco mode.
  • Rocket R58 Cinquantotto offers a touchscreen display that can detach from the machine for a more effortless handheld operation with menus to adjust boiler temperature, steam boiler on/off, and eco mode.

Build Materials and Aesthetics

Machine Exterior Finish Options
Torre Peppina EVO V2 Polished stainless steel & walnut accents Black, white, or stainless steel
Lelit Bianca V3 Polished stainless steel & walnut accents Black, white, or stainless steel

Common Questions Answered

Lelit Bianca vs. Rocket R58

Lelit Bianca V3 suits hands-on experimenters who prize flow paddle control and a lower price. Rocket R58 Cinquantotto appeals to those seeking near-silent rotary pumping, premium copper boilers, and a clean analog interface.

Is the Torre Peppina EVO Worth It?

Torre Peppina EVO justifies its price through ultra-precise touchscreen PID, marine-grade stainless steel boilers, and ergonomic ERGOLift support—features that elevate daily brewing consistency and comfort for demanding home baristas.

What is Flow Control and Why Does It Matter?

Flow control lets you adjust water volume and pressure ramp during extraction. By shaping pre-infusion and full-pressure phases, it enhances sweetness, body, and clarity—crucial for dialing in single-origin or dark-roasted beans.

What is an E61 Group Head?

An E61 group head uses thermosiphonic circulation to maintain even temperature across the brew path. Its integrated pre-infusion mechanism gently wets the puck, reducing channeling and improving extraction uniformity.

How Does PID Temperature Control Improve Consistency?

A PID (Proportional-Integral-Derivative) controller constantly measures boiler temperature and adjusts heating elements to within tenths of a degree. This precision avoids thermal drift, ensuring each shot is brewed at the exact set temperature.

Choosing Your Ideal Machine

Prioritize Features Based on Brewing Style

Start by defining your key priorities:

  • Flow Profiling: Manual paddle or touchscreen control
  • Steam Power: Boiler capacity and wand output
  • Temperature Precision: PID accuracy and display type
