Dual Boiler System
- VERSION 2 UPGRADE: Larger 1.5 liter steam boiler (up from 1.2), thickened flanges for both coffee and steam boiler
- EVO UPGRADE > Steam Capacity: 25% increase in size compared to the standard Peppina model.
- EVO UPGRADE > Steam Power: 25% increase in pressure with the capability to reach up to 1.6 bar.
- EVO UPGRADE > Water/Steam Pro-Balance: You have the ability to control the amount of water in the boiler. Less water allows for more steam capacity.
- Stainless steel, insulated: The boilers are made of stainless steel which is less susceptible to limescale. Typically stainless steel boilers do not retain their heat as well as copper or brass boilers. This V2 Peppina has thicker stainless over version 1. This espresso machine i also partially wrapped with insulation for energy savings and temperature stability.
- Pull a shot & steam milk at the same time: Steam is always readily available. Therefore there is no wait time going from coffee to steam mode. It works well if entertaining a small group of people.
- Auto refill: A sensor in the boiler detects when the water in the boiler is low. This prevents burning out the heating element.
E61 Grouphead
- EVO UPGRADE > Flow Control: Preinstalled on the grouphead giving you the ability to customize your espresso shots on the fly!
- Constantly Heated: Hot water circulates from the coffee boiler through the grouphead and back to keep the grouphead and your portafilter nice and hot. This keeps the grouphead at a constant, stable temperature compared to other groupheads that have a built-in heating element.

Multi-Function Aircraft Grade Touchscreen Display
- Alarms display: Any fault issues with the machine will notify you by displaying a red triangle and will stop the machine from operating until the issue is resolved. Any maintenance alarms you set will notify you by displaying a yellow triangle. The machine will still operate until you manually clear it.
- Maintenance planning: Set reminders for changing your water softener, cleaning, or maintenance cycle. Set by # shots pulled.
- Settings: Language, date, temperature format (°C > °F), water connection (reservoir > water line)
- Temperature/Pressure control: Adjust the coffee boiler temperature from 85 °C to 100 °C (185 °F to 212 °F) or the steam boiler pressure from 0.5 to 1.6 bar.
- Eco standby by mode: Set a time period of inactivity (in minutes) for when the machine will enter a standby mode to conserve energy.
- Counters: The machine keeps track of coffee shots pulled (resettable), the total lifetime coffee shots pulled, the amount of water passed through the machine, & # of maintenance cycles.
- Auto power on/off: You can set the machine to power on and off at certain times, like when you wake up or when you come home.
- Programmable preinfusion: Program both the initial pump start/stop time up to 25 seconds in 0.01 increments.
Steam / Hot Water Wand
- Joystick knobs: Quick action controls. Each knob locks in any direction for hands-free operation.
- Multi-directional wands: Allows for more movement and flexibility depending on the size of your pitcher or cup.
- 2-hole steam tip: Allows for a slow gradual build-up of microfoam. More steam tip holes mean faster frothing but also steam runs out quicker. 3-hole & 4-hole steam tips included. Choose which best fits your barista style.
Switchable Tank / Direct Water Line Connection
- Open top reservoir: Easy to clean. Easy to fill. However, to avoid spillage, we recommend removing the water tank when filling with water. Remember to use the OSCAR pack to soften your water (replacements available).
- Easy transition: After hooking up the water line hose (included) to your machine, all you need to do is change a setting in the touchscreen display. The water line hook-up is behind the drip tray, more convenient than underneath the machine. For direct connect water softening we recommend BWT.
Rotary Vane Pump
- Quiet operation: Rotary pumps are necessary for direct water line capable machines since vibration pumps cannot handle the incoming water pressure. The main benefit that you will experience is that they are a lot quieter.
- Adjustable: The adjustment screw is located underneath the water tank. A more convenient spot compared to other machines where you have to remove the body panel to access.

- Effective Dec 6, 2024, Torre espresso machines can come with SSR Relays either from Panasonic or Carlo Gavazzi.
- The Torre Peppina EVO Premium Dual Boiler can be connected to a smart timer switch. However, you must turn off the timer on the menu screen.
- The steam boiler will always have some water to cover the heating elements just in case someone quickly tuns on the steam boiler. If you do not steam milk, you can set, through the front aircraft grade touch screen, the level of the water in the steam boiler to 20% which reduces the water in the steam boiler.
General Espresso Machine Notes/Warnings:
- Upon first use (tank/reservoir models): On the initial start-up (or after a long period of non-use), it is important to make sure the pump is removing water from the tank. When the machine is powered on, you will hear the pump running. After 5 seconds, squeeze the in-line hose in the tank (usually the longest hose, has a particle filter attached). if you hear a different sound, this means the pump is working correctly. - Electrical: To avoid electrical damage to this espresso machine which is not considered a manufacturer's defect, please acquire and install a single-outlet surge suppressor rated at 1080 joules or higher. Without the recommended surge suppressor, the espresso machine can be damaged at the power switch, the electronics, the heating element, the pressurstat, or the wiring inside. - Water: To increase the useful life and not damage your espresso machine, please use softened water. Softened water is water without calcium and magnesium, but still has other minerals for espresso extraction. Do not use distilled, purified, or reverse osmosis water as these types of water create oxidation with the metals and cause the same damaging effects as limescale. - Descaling: We do not recommend descaling unless there is an issue with the espresso machine. Too much descaling can eat away at the metals and gaskets inside an espresso machine. As a preventative measure, we recommend using softened water as explained in the bullet point above.

I love the quality of the shots I can pull with this machine but suspect I have some touch scree and logic faults. I will ask my questions one at a time. The touch screen seems very insensitive on the lower left where I access the settings menu. It responds lower right for power and lower center for steam boiler on/off. Lower left I can tap repeatedly with no response, a dozen times or more. Every once in a while it responds. I have had my wife try (different skin) with the same effect. Is the touch screen defective? I need to access settings because of other problems I am having.

The aircraft display operates differently than a touch display on a phone. The buttons typically have to be pressed firmly with a thumb and held in place for a few seconds.
I have the Torre Peppina for about 2 years and have been using the water softener. I'd now like to upgrade to plumb the machine with a BWT Kit.
FIRST QUESTION - PLUMBING & BWT: I have some questions about the BWT Kit and which parts I need: From the BWT Kit Configuration page:
(a) Filter Header - Standard or Flex?
(b) Cartridge Size? I will order the premium but what is the differences in sizes.
(c) Adaptor - The Torre came with an adaptor and, braided. Do I need to buy a new one?
(d) Pressure Line Regulator - YES, And what pressure should the Torre Peppina have? (
e) Aqua Meter - Yes? or No? To be blunt, I would like to pass on this, but in the long run, is it an important item?
(f) Flush Valve - Yes The space I have available is: Back Wall - WIDTH from wall to plumbing un-obstruction — 9-1/2” Back Wall - Height —20 1/2” This is to the bottom of sink above. Depth of cabinet — 22 1/2” CLEAR door opening — 11 1/2” x 20 1/2” I have a space on the back wall/side wall that's 5” x 5” that has more clearance than 20-1/2. But it's a hard access, but likely a good mounting location
SECOND QUESTION: I have an elbow that has deteriorated in my Peppina. IT'S part of the pressure/overflow valve on the boiler. I would like to order it with the Filter. What part would I need?

Water capacity. Bigger sizes means more capacity. Better to start smaller in a home environment, medium in an office, and bigger sizes for commercial use.

Yes, you need the one in the kit because that side makes it easier to connect to your cold water line. More instructions on plumbing...

35-40 psi is normal. needs to be regulated.

Allows to keep tabs on amount fo water being used then adjust size of filter accordingly.

If this is the rubber elbow on top of the steam boiler, please just remove it and attach the hose directly to the bleeder valve.
Water. In my old Hx machine I used Brita filter water and in inline softener. Should I continue using Brita filter water. What should I use to condition the water? Do I use the Bilt Oscar 90 in the tank? How often do I need to replace that?

Bilt is good for 6 months and we have more information about it. Brita does soften water for about a week and no softening in week 3 from our testing many years ago. It is best to get a TDS meter and make sure your water is in the 80-100 ppm TDS range without any salts. This is a cold water test from your water source as well as testing the water in the reservoir and treated for 15 hours.

Sorry for the delay as this was lost in the queue from a programming update. The water tank should be emptied when not in use to avoid issues with dust, bugs attracted to water, etc. The reservoir should be hand washed with a normal dish soap and rinsed every 2 weeks or upon your return.

Only the steam boiler has been made larger on the V2. As indicated privately, we did not think this was necessary as the V1 had a lot of steam power. When made larger, it was re-informed with a slight thicker metal.
In your Peppina spec it says that there is a copper boiler whereas in the description it says it is an insulated stainless steel boiler. Copper boilers retain heat much better, correct? Although not sure if they are more susceptible to lime scale vs stainless steel..

I set the time on the Torre Peppina to go on in the morning at 7 and off at 9. Then again to go on at 3 and off at 5. Everyday, seven days. It took a while to set both the group head and steam boilers, but they match for times. Yet, when my machine turns on, the green steam light at the bottom isn't green. I have to then touch it for it to turn green, which means it's on. But if I turn on the machine by pressing the red power button at the right of the display outside of timer hours, the machine starts up and the steam light is green. So why doesn't the steam light come on with the timer settings? I guarantee both boilers are set at the same time.

Always make sure the date and time are set correctly. Next, when programming the start time for the coffee boiler and steam boiler, set the steam boiler for 15-30 minutes after the coffee boiler start. The coffee boiler should have priority on initial start up and usually takes 15-20 minutes to warm up depending upon different environments. 110 volt machines can not have both boilers at the same time, but we believe the programming was like this because in 220 volt models, it can occur.
