Features
Dual Boiler System
The Peppina EVO V2 features a larger 1.5-liter steam boiler—up from 1.2 liters—with 25% more steam capacity and pressure up to 1.6 bar. The stainless-steel boilers feature thicker construction and insulation for improved heat retention, energy efficiency, and resistance to limescale. Adjustable boiler water levels let you balance water and steam capacity, while the dual-boiler design provides steam on demand so you can brew and steam simultaneously. An automatic boiler refill system also helps maintain consistent performance and protects the heating element.
E61 Grouphead
The Peppina EVO V2 also features preinstalled flow control, allowing you to adjust and customize your espresso extraction on the fly. Its constantly heated grouphead circulates hot water from the coffee boiler to maintain stable brewing temperatures and keep the portafilter hot. The new ERGOLIFT lever provides a refreshed look and comfortable operation, while the grouphead pressure gauge gives you a direct reading of the actual extraction pressure.
Multi-Function Aircraft Grade Touchscreen Display
The Peppina EVO V2 features an advanced digital control system with customizable temperature and steam pressure settings, programmable preinfusion up to 25 seconds, and automatic power on/off scheduling. Built-in maintenance planning and shot counters help you keep track of cleaning, water treatment, and usage, while alarm notifications alert you to faults or upcoming maintenance. Additional settings include °C/°F temperature selection, reservoir or direct water connection, and an eco standby mode to help conserve energy.
Steam / Hot Water Wand
The Peppina EVO V2 features ergonomic joystick knobs for quick, hands-free control, along with multi-directional steam and hot water wands for greater flexibility with different pitcher and cup sizes. The included 2-hole, 3-hole, and 4-hole steam tips let you customize your steaming experience—from a slower, more gradual microfoam build to faster frothing based on your preferred barista style.
Switchable Tank / Direct Water Line Connection
The Peppina EVO V2 features an open-top water reservoir for easy filling and cleaning, with the included OSCAR water-softening pack helping reduce scale buildup. When you’re ready to switch to a direct water connection, simply connect the included water line and change the setting on the touchscreen—no additional modifications required. The water connection is conveniently located behind the drip tray, and BWT water filtration systems are recommended for direct-connect installations.
Rotary Vane Pump
The Peppina EVO V2 uses a quiet rotary pump, providing smooth, low-noise operation and supporting both reservoir and direct water-line use. The pump pressure is also adjustable, with the adjustment screw conveniently located beneath the water reservoir for easy access without removing the machine’s body panels.

Notes
- The Peppina uses lead free components.
- Stainless steel boiler with lead free brass fittings.
- Lead free brass group.
- Lead free brass taps.
- Lead free brass filter holders.
- Effective Dec 6, 2024, Torre espresso machines can come with SSR Relays either from Panasonic or Carlo Gavazzi.
- The Torre Peppina EVO Premium Dual Boiler can be connected to a smart timer switch. However, you must turn off the timer on the menu screen.
- The steam boiler will always have some water to cover the heating elements just in case someone quickly tuns on the steam boiler. If you do not steam milk, you can set, through the front aircraft grade touch screen, the level of the water in the steam boiler to 20% which reduces the water in the steam boiler.
General Espresso Machine Notes/Warnings:
- Upon first use (tank/reservoir models): On the initial start-up (or after a long period of non-use), it is important to make sure the pump is removing water from the tank. When the machine is powered on, you will hear the pump running. After 5 seconds, squeeze the in-line hose in the tank (usually the longest hose, has a particle filter attached). if you hear a different sound, this means the pump is working correctly. If not, immediately power down the machine and contact us. For more information, visit this page General Manual Pump Priming.
- Electrical: To avoid electrical damage to this espresso machine which is not considered a manufacturer's defect, please acquire and install a single-outlet surge suppressor rated at 1080 joules or higher. Without the recommended surge suppressor, the espresso machine can be damaged at the power switch, the electronics, the heating element, the pressurstat, or the wiring inside. For more information, visit this page Power Protection.
- Water: To increase the useful life and not damage your espresso machine, please use softened water. Softened water is water without calcium and magnesium, but still has other minerals for espresso extraction. Do not use distilled, purified, or reverse osmosis water as these types of water create oxidation with the metals and cause the same damaging effects as limescale. For more information, visit this page Water Choice.
- Descaling: We do not recommend descaling unless there is an issue with the espresso machine. Too much descaling can eat away at the metals and gaskets inside an espresso machine. As a preventative measure, we recommend using softened water as explained in the bullet point above.
- Backflushing: This procedure of cleaning the grouphead will need to be performed from time to time. For more information, visit this page Espresso Machine Backflush – Why 50?
