La Pavoni Botticelli Evolution Dual Boiler Espresso Machine w/ Flow Control
The La Pavoni Botticelli Evolution is a professional-grade espresso machine designed to deliver precise, consistent, and versatile coffee performance. At its core is a dual boiler system, featuring a stainless steel brew boiler for exceptional durability, corrosion resistance, and clean, neutral heat transfer that ensures stable extraction temperatures, paired with a copper and brass steam boiler for rapid heat-up, excellent thermal conductivity, and powerful, consistent steam for effortless milk texturing. This combination provides the perfect balance between precise espresso brewing and dynamic steaming capability. The E61 grouphead, renowned for its thermal mass and natural pre-infusion, ensures excellent temperature stability and consistent extractions. To elevate performance even further, we include and install a flow control kit at no extra cost, allowing hands-on adjustment of water flow for ultimate shot control.
Temperature management is enhanced by independent PID controls for the brew and steam boilers, with dedicated displays for easy monitoring at a glance, offering superior precision compared to single-display systems. Fully multi-directional steam and hot water wands with rotary knobs provide flexible positioning and fine control, while the steam wand’s two-hole tip delivers balanced steam flow, ideal for producing smooth, silky microfoam. Separate pressure gauges for each boiler and individual power switches allow monitoring and operation in espresso-only mode or with steam enabled, improving efficiency and user control.
Practicality is built in with a switchable water tank that has an open-top design for easy refilling and cleaning, while a direct water line option eliminates the need for constant refills. A rotary vane pump delivers quiet, stable pressure and supports water line connection, providing long-term reliability and smooth operation. Dual boiler system
The Botticelli Evolution features a brew boiler made of stainless steel, offering excellent durability, corrosion resistance, and clean, neutral heat transfer that preserves water purity and ensures stable extraction temperatures. The steam boiler is constructed from copper with brass components, providing rapid heat-up, excellent thermal conductivity, and powerful, consistent steam for effortless milk texturing. This combination balances precise espresso brewing with dynamic steaming performance for ultimate versatility.
E61 Grouphead
The iconic E61 grouphead, prized for its thermal mass and natural pre-infusion, delivers excellent temperature stability and consistent extractions. Compared to lighter grouphead designs, the E61 maintains heat more effectively and offers greater shot control. To elevate performance even further, we install a flow control kit at no additional cost, allowing hands-on adjustment of water flow during extraction.
PID controls
The Botticelli Evolution is equipped with separate PID temperature controls for the brew and steam boilers, allowing each to be regulated independently for optimal performance. Dedicated displays make it easier to monitor both temperatures at a glance, rather than relying on a single display that switches between boilers.
Steam/water wand
Fully multi-directional steam and hot water wands for flexible positioning and comfortable use at any angle. Rotary control knobs provide smooth, progressive adjustment, offering finer control over steam and water output compared to push or lever-style knobs. The steam wand is fitted with a two-hole tip, delivering balanced steam power that makes milk texturing easier and more forgiving, ideal for producing smooth, silky microfoam with greater control.
Pressure gauges
Separate pressure gauges display real-time pressure for both espresso extraction and steam boiler operation, making system performance easy to monitor at a glance. Dedicated power switches for each boiler allow the machine to be run in espresso-only mode or with steam enabled as needed, improving energy efficiency and providing greater control over daily use.
Switchable water tank/direct water line connection
The water tank features an open-top design for easy refilling and cleaning, while the option to connect directly to a water line eliminates the need for constant refills, offering flexibility and convenience for any setup.
Rotary vane pump
The Botticelli Evolution is equipped with a rotary vane pump, which operates significantly quieter than traditional vibration pumps and provides stable, consistent pressure for precise espresso extraction. Its design also enables connection to a direct water line, while offering improved durability and smooth operation for long-term reliability.

- Portafilters: Single spout & dual spout. Both 58mm.
- Filter baskets: 1-cup, 2-cu, & blind for backflushing.
- Tamper: Cheap plastic. We recommend upgrading to a solid one.
- Cleaning brush: for the grouphead.
- Scoop: For ground coffee.
- Hoses: Stainless steel braided for water line connection, and silicon hose for draining the drip tray.

Notes
General Espresso Machine Notes/Warnings:
- Upon first use (tank/reservoir models): On the initial start-up (or after a long period of non-use), it is important to make sure the pump is removing water from the tank. When the machine is powered on, you will hear the pump running. After 5 seconds, squeeze the in-line hose in the tank (usually the longest hose, has a particle filter attached). if you hear a different sound, this means the pump is working correctly. - Electrical: To avoid electrical damage to this espresso machine which is not considered a manufacturer's defect, please acquire and install a single-outlet surge suppressor rated at 1080 joules or higher. Without the recommended surge suppressor, the espresso machine can be damaged at the power switch, the electronics, the heating element, the pressurstat, or the wiring inside. - Water: To increase the useful life and not damage your espresso machine, please use softened water. Softened water is water without calcium and magnesium, but still has other minerals for espresso extraction. Do not use distilled, purified, or reverse osmosis water as these types of water create oxidation with the metals and cause the same damaging effects as limescale. - Descaling: We do not recommend descaling unless there is an issue with the espresso machine. Too much descaling can eat away at the metals and gaskets inside an espresso machine. As a preventative measure, we recommend using softened water as explained in the bullet point above.
