Features
Dual Boiler System
- Stainless steel, insulated: The boilers are made of stainless steel which is less susceptible to limescale. Typically, stainless steel boilers ‘usually’ do not retain their heat as well as copper or brass boilers. Although pretty thick, this espresso machine compensates for that by being wrapped with insulation.
- Pull a shot & steam milk at the same time: Steam is always readily available. Therefore there is no wait time going from coffee to steam mode. It works well if entertaining a small group of people.
- Auto refill: A sensor in the boiler detects when the water in the boiler is low. This prevents burning out the heating element.
- Shot Timer included.
E61 Grouphead
- Constantly Heated: Hot water circulates from the boiler through the grouphead and back to keep the grouphead and your portafilter nice and hot. This keeps the grouphead at a constant, stable temperature compared to other groupheads that have a built-in heating element.
- ERGOLIFT Lever: A new look on the activation lever of the grouphead.
- Pressure Gauge: Measures the actual pressure readout at the grouphead level.
PID Controls
- Coffee boiler temperature: Adjust the temperature of the water in the coffee boiler.
Unit of measurement: Switch from Celsius to Faranheit.
Steam / Hot Water Wand
- Joystick knobs: Quick action controls. Each knob locks in any direction for hands-free operation.
- Multi-directional wands: Allows for more movement and flexibility depending on the size of your pitcher or cup. 2-hole steam tip: Allows for a slow gradual build-up of microfoam. More steam tip holes mean faster frothing but also steam runs out quicker.
Switchable Tank / Direct Water Line Connection
- Open top reservoir: Easy to clean. Easy to fill. However, to avoid spillage, we recommend removing the water tank when filling with water. Remember to use the OSCAR pack to soften your water (replacements available).
- Easy transition: After hooking up the water line hose (included) to your machine, all you need to do is flip a switch behind the drip tray. For direct connect water softening we recommend BWT.
Dual Pressure Gauge
- Pump pressure: Located on the left side of the gauge. Measures the bar pressure in the grouphead during extraction. The optimal pressure is around 9-10 bar.
- Steam pressure: Located on the right side of the gauge. Measure the amount of steam pressure built up. Optimal range is between 0.8 and 1.2 bar.
Rotary Vane Pump
- Quiet operation: Rotary pumps are necessary for direct water line capable machines since vibration pumps cannot handle the incoming water pressure. The main benefit that you will experience is that they are a lot quieter.
- Adjustable: The adjustment screw is located underneath the water tank. A more convenient spot compared to other machines where you have to remove the body panel to access.

General Espresso Machine Notes/Warnings:
- Upon first use (tank/reservoir models): On the initial start-up (or after a long period of non-use), it is important to make sure the pump is removing water from the tank. When the machine is powered on, you will hear the pump running. After 5 seconds, squeeze the in-line hose in the tank (usually the longest hose, has a particle filter attached). if you hear a different sound, this means the pump is working correctly. If not, immediately power down the machine and contact us. For more information, visit this page General Manual Pump Priming.
- Electrical: To avoid electrical damage to this espresso machine which is not considered a manufacturer's defect, please acquire and install a single-outlet surge suppressor rated at 1080 joules or higher. Without the recommended surge suppressor, the espresso machine can be damaged at the power switch, the electronics, the heating element, the pressurstat, or the wiring inside. For more information, visit this page Power Protection.
- Water: To increase the useful life and not damage your espresso machine, please use softened water. Softened water is water without calcium and magnesium, but still has other minerals for espresso extraction. Do not use distilled, purified, or reverse osmosis water as these types of water create oxidation with the metals and cause the same damaging effects as limescale. For more information, visit this page Water Choice.
- Descaling: We do not recommend descaling unless there is an issue with the espresso machine. Too much descaling can eat away at the metals and gaskets inside an espresso machine. As a preventative measure, we recommend using softened water as explained in the bullet point above.
- Backflushing: This procedure of cleaning the grouphead will need to be performed from time to time. For more information, visit this page Espresso Machine Backflush – Why 50?

When I'm making an espresso, the espresso will spray out of the porta filter when the valve is wide open. How far closed should you keep that top valve? Can you tell me why the espresso would spray? Should I not use a screen portafilter? Thank you

We are assuming that you are using a bottomless portafilter and this is causing the spray. This means the coffee grind may not be suitable. In addition, if the coffee was roasted less than 7 days ago, you can get spray from the quick release of oxygen. The paddle on top of the group head is used to control the flow of water. The gauge on the group head will show you the pressure hitting the puck, as long as the grind is fine enough. You can also use the single spout or dual spout portafilter. If by spraying your mean that the espresso is coming out too fast, then if may be that your grind finest is not fine enough or there is too little coffee in the basket.
I wonder about the gauge on the group head. That doesn’t seem to change, just reads zero. I’ve opened and closed that valve while making an espresso but it looks like it’s not registering. The main pressure gauge does show pressure. Should it change?

The group head gauge measures the resistance of the puck. If you run the group head free flowing or without enough resistance created by the amount of coffee or the finest of the coffee grind, the gauge will not register any pressure. You can test the group head gauge by putting in a blind filter and then running the group head for a minimum of 30 seconds. The gauge needle should move upwards.
Does Maruccia also have a possibility to boost the steaming through that knob, ie is that knob on Maruccia equivalent to the pressure balance on the PID at Peppina whereas you decrease the level of water in a water boiler to increase the steam pressure (in the steam boiler)?

Sorry, the water feature of the steam boiler is exclusive to the premium version of the Torre Peppina. With the Torre Mariuccia at a lower price, there will be less features.

Just the machine, drip tray, and top cover, the machine weights approximately 58 pounds. No portafilters, accessories, nor water were weighed in this measurement.
For removal of the top rail....

The PID and related PID sensor only controls the coffee boiler.
The steam boiler is controlled by a pressurstat to achieve a very competitive price. If one really thinks about it, how often is the steam boiler temperature changed. If a user desires it, the Torre Peppina EVO Premium Dual Boiler Espresso Machine should be purchased.
The cup rail is removable, but
- a) the rail connection may be damaged which is not covered warranty (it is not held in by bolts, but a twist of the metal which makes it very tight to lessen rattling), and/or
- b) it may be difficult to remove the top cover when refilling the reservoir.
As the machine has just arrived, we are still posting data. The weight will be posted once actually weighed.
