Mocha Panna Cotta with Amaretto Soaked Strawberries

What could be better on Valentine’s Day than a box of chocolates? How about a deliciously smooth panna cotta made with dark chocolate and espresso? Topped with strawberies soaked in amaretto? Need we say more?!

The best part about this recipe, is that while it seems like an expert-level dessert, it’s actually super easy! This decadent treat takes very little time to prepare, and only takes a few simple steps. The hardest part is trying to not steal a bite while waiting for it to chill!

Mocha Pannacotta with Amaretto Soaked Strawberries

Serves 2 – Prep Time: 4 hrs 15 min – Cook Time: 15 minutes

For panna cotta:
1 cup whipping cream
1/4 cup quality chocolate
1/8 cup sugar (1/4 cup if you like things a bit sweeter)
2 tbs espresso
1 tsp powdered gelatin
4 tbs water
For topping:
1 cup strawberries, chopped
3 tbs amaretto
1 1/2 tsp fresh lemon juice

1.) Combine cream, chocolate, sugar, and espresso in a saucepan and simmer on medium-high heat for about 2-5 min. Then turn off heat and let it steep for 10 min.
2.) Meanwhile, put 4 tbs of water in a shallow bowl. Sprinkle 1 tsp of gelatin on top of water and let that sit for 5 minutes.
3.) In that time, we’ll roughly chop 1 cup of strawberries. Put them in a mason jar with 3 tbs of amaretto and 1 1/2 tsp of lemon juice. Leave that to chill at least 4 hrs or overnight.
4.) Scoop 1/8 cup of chocolate mixture into the gelatin. Stir until incorporated. Then pour this into the rest of the saucepan and stir until dissolved.
5.) Pour into small dishes and refrigerate for at least 4 hours or overnight.
6.) Top chilled panna cotta with strawberries and dig in!
