Overview:
One has to ask oneself.... why pay $6500 or more for a machine when the Vibiemme Double Boiler V3 can offer similar quality in the cup at a much lower price? Why save a few dollars for on other double boiler machines to short change onself on the research and design of the Vibiemme Double Boiler V3 espresso machine?
From October 2009 through March 2011, Vibiemme has worked diligently with importers, distributors, and industry professionals to upgrade their Double Domobar double boiler espresso machine. One of the main requirements was to design and build a dual boiler espresso machine that would not have any compromises at 15 amps electrical service when compared to 20 amps. We are proud to announce some of the improvements on the new, redesigned, 2011 version 3 of the Vibiemme Double Boiler....
TOP FEATURES that brings the Vibiemme Domobar Super Double Boiler espresso machine to the TOP!
- Double boilers - the user can operate a coffee boiler and steam boiler independently of each other or both at the same time.
- PID (Proportional, Integral, Derivative) allows user to manage temperature control of the coffee boiler . If you are not sure what PID is, here is an overview.
- Small water reservoir at 1.2 liters allows approximetaly 20 double shots to be extracted without a refill - refill can occur on the fly while the machine is operating.
For those who believe the small boiler makes better coffee because of fresh water displacement, we have a smaller reservoir for the same reason.
- OPV (over pressure valve) feeds excess water pressure to the drip tray and not the water reservoir - this will allow operation of the direct water connection without having the reservoir fill with overflow water - which can get moldy and require constant emptying and cleaning.
- The drip tray can be drained manually or connected to a drain WITHOUT purchasing any optional kits (drain hose can be purchased at local hardward or plumber's supply).
- Insulation on coffee and steam boilers helps save energy. The insulation on the coffee boiler also aids in temperature stability for the espresso extraction.
- Only up to 15 amps required without any additional switches or internal adjustments.
- Commercial-grade motor and rotary vane pump with ability to make a direct water connection or use a water reservoir on the same machine with the movement of a lever under the machine. Includes stainless steel braided hose with 3/8" male thread.
- User programmed offset - the temperature regulation is at the coffee boiler, and the grouphead always has a lower temp. This feature allows the user to program this delta in temperature as every environment has a different offset.
In addition to achieving optimal temperature stability over previous versions, one of Vibiemme’s main goals when redesigning their double boiler machine was to keep the amperage requirement below the 15 amp mark - not only making it easier to find a connection in any household, but also to keep energy comsumption at a minimum. Thanks to an innovative method of controlling the percentage of power to the heating elements, Vibiemme’s Power Management Control System (PMCS) automatically regulates variable power to each heating element. The total amperage draw of the machine will never go over 15 amps using 110-120 volts.

- Heavy duty true Vibiemme E61 grouphead maintains active flow of water from the grouphead to the heat exchanger in the boiler.
- Professional grade brass portafilters - one portafilter with single spout and single filter basket and one portafilter with dual spout and double filter basket.
- Coffee boiler capacity/material: 0.5 liter copper boiler
- this very small coffee boiler allows quicker displacement of any stale water as possibly found on larger coffee boilers for machines in this class.
- Steam boiler capacity/material: 1.9 liter copper boiler.
- Boiler pressure gauge to indicate steam boiler pressure. The setting can be varied by adjusting the pressurstat
- please note the body panel has to be removed as there is a new international safety standard that Vibiemme has manufactured this machine under, and the standard requires that no access port be allowed for changing the pressurstat setting.

is quieter than a vibration pump, but it is more expensive to replace.

- OPV (over pressure valve opens when too much pump pressure exists) located in rear of machine with easy access when body panel and six (6) associated screws and divider are removed. Although the pump has an adjustment screw for regulation, the OPV is an additional feature to manage overflow that may be caused by overpressure from the water company when the machine is plumbed in.

We have decided to NOT offer no-burn steam wands because the typical internal diameter is about 50% less than a normal steam wand, and this usually affects performance times in steaming. In addition, the grouphead has a much greater area to get burned.
- When in direct connect mode, there is a screw in the water tank plate that the user can tighten to hold the plate down so the switch is activated to make the machine think there is water in the reservoir.

1 Domobar super Double Boiler technical details – 2011 version
1.1 Coffee boiler technical details:
Coffee boiler: 0.5 liters

The coffee boiler is situated vertically, and at the time of this writing, this is the smallest coffee boiler that we know of on a prosumer/commercial double boiler espresso machine - as with heat exchangers, less water standing water means superior cup profiles. After many months of testing, Vibiemme found this configuration (boiler size and wattage) to provide the optimal temperature stability with both scenarios: steam boiler on or steam boiler off.

*Inside the horizontal steam boiler’s lower part where the water is located, there is a heat exchanger pipe which pre-heats water for the coffee boiler: water outlet temperature 97°C (208°F) for pressures higher than 1 bar. The pre-heating exchanger pipe is horizontal in the horizontal steam boiler to avoid any of the higher temperature steam transferred by the upper portion of the vertical steam boiler as found on other double boiler machines. In theory, the heat exchange pipe portion in the steam portion of a vertical steam boiler will turn into steam, and this can cause an unwanted variation in the temperature of the water to the coffee boiler when the machine has been idling too long.

1.5 Fresh water supply configuration:
The machine has a dual water-supply system. The user can use the internal water reservoir or connect to an existing water line (water softener recommended). Both options on the same machine utilize a rotary pump. A mechanical lever, located under the machine, allows the end-user to choose their inbound water supply.
1.6 Waste-water drainage system
The machine has a dual drainage system: the end-user can drain the waste water into the drip tray (and manually empty it out) or connect it directly to an existing drain system.
2 Thermic stability trial of the Domobar Super Double Boiler: tools, procedures and validation.
Important Definition: What is thermic stability ?
Thermic stability is the one of most important features on a PID double boiler espresso machine; it is the difference among the maximum temperatures recorded in a shot sequence.Differences between 2C° and 3C° have to be considered as acceptable, between 1C° and 2C° good, below 1C° excellent: these values create the thermic stability range, which depends on the manufacturing features of the machine.
2.1 Tools:
Thermic stability values can be detected through a measuring instrument for temperatures (SCACEII), placed at the group exit, following a world renowned testing pattern as outlined on the next section.
2.2 Procedures: the trial was made referring to a world class and statndardized testing pattern

The “Test point” corresponds to one shot of 50 ml double espresso brewed in 25 seconds.
The “Idle Interval” is the time between one shot (end) and the beginning of the other.
The test is made by recording the maximum temperatures of test points 1-14, respecting the idle intervals.
The differences among the maximum temperatures recorded from test point 1 to test point 14 give as a result the values of the thermic stability range.
2.3 Validation
Besides checking the Domobar Super Double Boiler thermic stability values, the test aims to confirm the empirical model of the E61 group isothermy in an idle state, published on home-barista http://isotherm.blogspot.com/. This model states that when the idle Interval is longer than 2 minutes, the temperature difference between the red part (where the thermosiphonic circulation takes place in an idle state) and the blue part ( the farthest and coldest part), is approx. 7 °F.
This is the basic principle of the pre-shot, suggested to all users of E61 espresso coffee machines.
3. DOMOBAR SUPER Double Boiler Version 3 - THERMIC STABILITY TEST RESULTS : Confirmation of the empirical on E61 grouphead isothermy and Domobar Super Double Boiler stability test’s report
3.1 Confirmation of the empirical model on group E61 isothermy
The thermic stability tests made on the Domobar Super Double Boiler confirm the isothermic model on group: the E61 group must be “taken to the right temperature” when the idle Interval is longer than 2 minutes. The temperature difference between Test Point 1-14 maximum temperatures and the thermic stability range (test point 6-14) is 7° F (without pre-shots).This data has to consider as a project feature of the E61 group, so the meaning of the thermic stability data has to take this feature into consideration.

5. HOW DOES THE NEW DOMOBAR SUPER Double Boiler WORK?
The Domobar Super Double Boiler can be used in different power configurations:
- Steam boiler ON and Coffee boiler ON
- Steam boiler OFF and Coffee boiler ON
Both configurations are available with:
- Water fills through existing direct water connection or plumbed in line (a water softener is always recommended)
- Water fills through water reservoir
- Water drains into the drip tray
- Water drain through existing drainage system
In case of both boilers ON (thanks to coffee boiler water pre-heating function), thermic stability range of 1°C can be kept even on shots taken every 10 seconds with less wattage utilized within the coffee boiler. Vibiemme can finally state that the testing pattern was successfully passed with up to 900 watts absorption. In the case of the steam boiler OFF, thermic stability range of 1°C with varying watts absorption of up to 900 watts.
The steam boiler performances are the same of the Domobar Super HX steam boiler - this is a vast improvement over the previous 2 versions. The double boiler version lower wattage is counterbalanced by the steam boiler insulation.

Service Notes:
Backflushing: This machine should be backflushed minimum once every 50 espresso extractions using Ascaso Detergent (our instructions included with purchase). This is only for cleaning the oils fromt he grouphead.
Descaling: This really is for internally cleaning of the machine. Recommended using Ascaso Descaler. Once every month for coffee boiler, and once every 3-6 months for the coffee boiler. However, it can be more or less time depending upon the amount of magnesium and calcium is in your water, how often you use the machine, and how much time you leave the machine powered on each day.
