Dual Boiler System
- EVO UPGRADE > Steam Capacity: 25% increase in size compared to the standard Peppina model.
- EVO UPGRADE > Steam Power: 25% increase in pressure with the capability to reach up to 1.6 bar.
- EVO UPGRADE > Water/Steam Pro-Balance: You have the ability to control the amount of water in the boiler. Less water allows for more steam capacity.
- Stainless steel, insulated: The boilers are made of stainless steel which is less susceptible to limescale. Typically stainless steel boilers do not retain their heat as well as copper or brass boilers. This machine compensates for that by being wrapped with insulation.
- Pull a shot & steam milk at the same time: Steam is always readily available. Therefore there is no wait time going from coffee to steam mode. It works well if entertaining a small group of people.
- Auto refill: A sensor in the boiler detects when the water in the boiler is low. This prevents burning out the heating element.
E61 Grouphead
- EVO UPGRADE > Flow Control: Preinstalled on the grouphead giving you the ability to customize your espresso shots on the fly!
- Constantly Heated: Hot water circulates from the heat exchanger through the grouphead and back to keep the grouphead and your portafilter nice and hot. This keeps the grouphead at a constant, stable temperature compared to other groupheads that have a built-in heating element.
- ERGOLIFT Lever:
- Pressure Gauge: Measures the actual pressure readout at the grouphead level.
Multi-Function Aircraft Grade Touchscreen Display
- Alarms display: Any fault issues with the machine will notify you by displaying a red triangle and will stop the machine from operating until the issue is resolved. Any maintenance alarms you set will notify you by displaying a yellow triangle. The machine will still operate until you manually clear it.
- Maintenance planning: Set reminders for changing your water softener, cleaning, or maintenance cycle. Set by # shots pulled.
- Settings: Language, date, temperature format (°C > °F), water connection (reservoir > water line)
- Temperature/Pressure control: Adjust the coffee boiler temperature from 85 °C to 100 °C (185 °F to 212 °F) or the steam boiler pressure from 0.5 to 1.6 bar.
- Eco standby by mode: Set a time period of inactivity (in minutes) for when the machine will enter a standby mode to conserve energy.
- Counters: The machine keeps track of coffee shots pulled (resettable), the total lifetime coffee shots pulled, the amount of water passed through the machine, & # of maintenance cycles.
- Auto power on/off: You can set the machine to power on and off at certain times, like when you wake up or when you come home.
Steam / Hot Water Wand
- Joystick knobs: Quick action controls. Each knob locks in any direction for hands-free operation.
- Multi-directional wands: Allows for more movement and flexibility depending on the size of your pitcher or cup.
- 2-hole steam tip: Allows for a slow gradual build-up of microfoam. More steam tip holes mean faster frothing but also steam runs out quicker. 3-hole & 4-hole steam tips included. Choose which best fits your barista style.
Switchable Tank / Direct Water Line Connection
- Open top reservoir: Easy to clean. Easy to fill. However, to avoid spillage, we recommend removing the water tank when filling with water. Remember to use the OSCAR pack to soften your water (replacements available).
- Easy transition: After hooking up the water line hose (included) to your machine, all you need to do is change a setting in the touchscreen display. The water line hook-up is behind the drip tray, more convenient than underneath the machine. For direct connect water softening we recommend BWT.
Rotary Vane Pump
- Quiet operation: Rotary pumps are necessary for direct water line capable machines since vibration pumps cannot handle the incoming water pressure. The main benefit that you will experience is that they are a lot quieter.
- Adjustable: The adjustment screw is located underneath the water tank. A more convenient spot compared to other machines where you have to remove the body panel to access.

- The Torre Peppina EVO Premium Dual Boiler can be connected to a smart timer switch. However, you must turn off the timer on the menu screen.
General Espresso Machine Notes/Warnings:
- Upon first use (tank/reservoir models): On the initial start-up (or after a long period of non-use), it is important to make sure the pump is removing water from the tank. When the machine is powered on, you will hear the pump running. After 5 seconds, squeeze the in-line hose in the tank (usually the longest hose, has a particle filter attached). if you hear a different sound, this means the pump is working correctly. - Electrical: To avoid electrical damage to this espresso machine which is not considered a manufacturer’s defect, please acquire and install a single-outlet surge suppressor rated at 1080 joules or higher. Without the recommended surge suppressor, the espresso machine can be damaged at the power switch, the electronics, the heating element, the pressurstat, or the wiring inside. - Water: To increase the useful life and not damage your espresso machine, please use softened water. Softened water is water without calcium and magnesium, but still has other minerals for espresso extraction. Do not use distilled, purified, or reverse osmosis water as these types of water create oxidation with the metals and cause the same damaging effects as limescale. - Descaling: We do not recommend descaling unless there is an issue with the espresso machine. Too much descaling can eat away at the metals and gaskets inside an espresso machine. As a preventative measure, we recommend using softened water as explained in the bullet point above.
